It’s the beginning of June, and time to pick and dry an early crop of overwintered oregano and thyme, as well as other early perennial herbs.

Bundles of oregano drying on one of my herb lines.
Thyme laid out to dry. This pan has holes, and is meant to be used for roasting vegetables on the grill. It works great for this purpose because there is good air flow on all sides. A screen also works very well.
